Apple Chips

This recipe is from Good Girl Gone Wife. But I made a few modifications so I thought I should write it down :) 

Apple Chips

5 small Fiji Apples

Wash the apples and core them. Peal them if you want, but I prefer my apple chips with the peal on. Slice thin ( I used a mandolin). Bake at 225 for 2-3 hours or until crisp. Alex added cinnamon, but I decided to go Au Natural. 

Easiest recipe ever. 

EZ Tomato Basil Chicken

This is a Hungry Girl recipe, but we made it and it was super delish, so I decided to add it to my recipe collection. It is from her awesome cook book 200 meals for under 200 calories! The recipe makes 4 servings, but we decided to make the whole thing because it was for dinner. But I could only finish one serving.

EZ Tomato Basil Chicken

1 14 oz can of Diced Tomatoes with Basil
2 Chicken Breasts (But one would have been enough...)

optional- Low Cal Pasta (We used Smart Taste Rotini for 170 cal a serving)

Put half of the can of tomatoes on the bottom of a baking dish. Place the raw chicken on top and pour the rest of the tomatoes on top. Bake at 350 for 45 minutes, or until chicken cooked through. We cooked the pasta as directed, and served the chicken over the pasta. 

Tada! Very fast, cheap and easy dinner. And it was really yummy!
